Mac and cheese
Ingredients
Sauce
- Fairlife 0% milk - 30ml
- Sodium citrate - 10g
- Cheese seasoning - 1 tsp
- Smoked paprika - 2 tsp
- black pepper - 1 tsp
- lowrys - 1 tsp
- Tumeric (for color) - 1/8 tsp
- msg - 1 tsp
- salt
- pepper
- Cottage cheese 0% fat - 454g
- Cheddar - 100g
- Smoked gouda - 14g
- Whipped cream cheese - 30g
Place everything in a blender and keep going til it's smooth
Vegetables
Mushrooms
- White mushrooms - 10oz
- Avocado oil - 10g
- Soy sauce - 1.5 tbsp
- Liquid smoke - .5 tsp
- Maple syrup - 1.5 tbsp
Toss and place in a preheated 450F oven for 25 minutes
Pasta
With cottage cheese sauces, dry pasta pairs better texturally.
I suggest small shells or elbows followed by an ice bath so that it doesn't get mushy.
Also, to reduce pasta sticking to eachtoher, stir vigorously for the first 45 seconds in the pot.
