Ingredients

  1. tail off deveined shrimp - 2 lbs
  2. white onion cut into half moons - 1/2x
  3. garlic - 2 cloves
  4. ginger - same amount as garlic
  5. curry leaves - 10x
  6. Jaffna curry powder - 2 tbsp
  7. salt to taste
  8. ratchi thool - 2 tsp
  9. 14g avocado oil

Method

  1. Heat up oil in a big pot on medium heat
  2. Cook onions until transculuent (~10-15 minutes)
  3. Add the garlic, ginger, curry leaves and cook for 2 minutes
  4. Add the curry powder and cook for 4 minnutes
  5. Turn the heat up to medium high
  6. Add the shrimp
  7. Cook for 10 minutes stirring halfway though
  8. Add the ratchi thool
  9. Cook for 5 more minutes
  10. Enjoy :)
